I am running my own server at home with ubuntu-desktop. On which I am also running pihole. I have multiple google-wifis as access points and I am now looking into hosting an OpenVPN server on my server. How would I route all network traffic through that VPN as standard?

Can you please add additional information about your network topology, and why you are running an OpenVPN server? My best guess is that you have Google WiFi APs in one physical location, and a Ubuntu server in another, and you don't trust the ISP at the place you have the APs setup.
