What's the difference between process and processing(and also fast and fasting)?
◾ the process of insurance claims
◾ the processing of insurance claims
(to eat no food)
◾ fast hours
◾ fasting hours
Can I use them interchangeably?

These are two separate cases - the first version of your first pair would normally be considered syntactically deficient, but the first of the second pair is just "awkward", "non-idiomatic" to many if not most native speakers. The question is thus essentially POB, but it might be a better fit on English Language Learners
